Cajun Roasted Pumpkin Seeds

I absolutely love the season of Fall! There’s just something about all of the smells, colors, and feelings Fall provokes. Even more so, I LOVE anything pumpkin! Pumpkin scents, pumpkin crafts, pumpkin foods. The beginnings of Fall just mean that the holidays are coming and I’m a sucker for good holiday recipe ideas. I love coming up with my own recipes or “pinning” recipes I find.

Being the southern gal that I am, I came up with this recipe one year after not wanting to waste our pumpkin seeds. We’ve had roasted pumpkin seeds before, but that year I just wanted to add an extra pizazz to them. So I decided to put my cajun spices–and trust me, my lazy susan is filled with them–to good use.

This recipe is so easy and the pumpkin seeds are addicting and yummy!

Cajun-Roasted Pumpkin Seeds

Ingredients:

  • 1 cup of pumpkin seeds
  • 1 heaping tsp. of Cajun seasoning, more or less depending on your taste buds
  • 1/2 tsp. paprika
  • 1 tbsp. of Worcestershire sauce
  • 1 tbsp. of melted butter
  • Few dashes of Tabasco sauce, optional

Preparation:

Preheat oven to 300°.

Rinse seeds well to get as much pumpkin pulp off as you can. Don’t worry if they don’t clean off completely. The small pieces of pulp won’t affect the seeds at all. Pat the seeds dry with paper towels.

In a big bowl, toss your pumpkin seeds with the seasoning. Combine the butter and Worcestershire sauce and stir into the seeds until they are fully coated.

Roast seeds at 300° for 45 minutes, turning them every 15 minutes, or until lightly browned and crunchy.

Enjoy the smells wafting from your oven!

Then, enjoy! You can add these seeds to a salad, over oven-baked fish, or just as a snack!

Double this roasted pumpkin seed recipe for every cup of seeds you have.
Ingredients
  • 1 cup of pumpkin seeds
  • 1 heaping tsp. of cajun seasoning, more or less depending on taste preference
